Baked Zoats

I absolutely adore oats; they’re so healthy, easy and versatile. Recently I’ve been experimenting with different ways to prepare them, so I thought I’d share a recipe with you that I really love – baked zoats!


Adding courgette (zucchini) to your oats is a great way to include some green veg into your diet. I know it sounds weird but trust me on this one!


Ingredients

60g oats

½ courgette

1 scoop protein powder


Directions

Preheat your oven to 180c

Get your oats in a small ovenproof dish

Grate the courgette as finely as possible (or thicker if you like the added crunch) and add the courgette to the oats

Mix the protein powder in a shaker with around 200-300ml of water then pour into the oats. You don’t want the mixture to be too liquidy. Of course if you don’t use protein powder you can just add water or milk

Pop into the oven for around 15-20 minutes - this forms quite a cakey mixture, so if you want something a little runnier just reduce the cooking time

Top with whatever you like – a personal favourite of mine is fresh strawberries and cacao nibs


Extras

I love to stir through an egg white before cooking for added protein

I also love to add maca or baobab for an extra boost
